The Covenant/RED C winemaking team is comprised of Jeff Morgan, associate winemaker Jonathan Hajdu, and cellarmaster Eli Silins. Our wines are made in an artisanal manner that includes native yeast fermentations and little or no filtration and fining. In a sense, our winemaking techniques are not that different from those of our ancestors some 3,000 years ago.
Our new winery in Berkeley, CA, has allowed us to make more small lots of wine and become more efficient. We also think it may make our wines taste even better than they have in the past!
